Walnut Marzipan Cookies
Ingredients
For the cookies:

100 gstevia powdered sugar

2 tbspFlavour Kick Vanilla

150 gInstant Oats
-
200 gground walnuts
-
1 tbsplemon juice

50 mlwater, cold
For the marzipan layer:

125 gdried apricots
-
3 tbsplemon juice
-
200 gmarzipan paste
-
100 gstevia powdered sugar
You will also need:

20 gapricot jam
-
100 gdark chocolate
-
100 gwhole walnuts

Preheat the oven to 180° C.

First make the cookies: Sift the powdered sugar into a bowl. Add the Flavor Kick, Instant Oats, and ground walnuts. Stir well.

Add the lemon juice and cold water. Knead together with your hands into a consistent dough.

Lay down a sheet of parchment paper. Put the dough onto it and cover with another sheet of parchment paper. Roll the dough out 0.5cm thick.

Use a round cookie cutter to make about 40 cookies. Place onto a sheet of parchment paper on a cookie sheet.

Bake the cookies for 6-8 minutes.

Take the cookies out of the oven and set aside to cool.

Meanwhile, cut the apricots into small pieces. Put in a bowl and cover with the lemon juice. Set aside for about 2 hours.

Add the marzipan paste. Use a mixer to blend everything into a smooth mixture.

Fold in the powdered sugar.

Dust your working surface with powdered sugar. Roll the marzipan-apricot mixture out on the powdered sugar. Use the same cookie cutter as before to cut 40 circles out of this mix.

Warm the apricot jam in a small pot.

Spread a layer of apricot jam on the top of each cookie, then place a marzipan circle on top.

Melt the dark chocolate in a bowl over a pot of boiling water.

Dip each of the marzipan cookies into the melted chocolate. Garnish with a walnut.

Set the walnut marzipan cookies aside for the chocolate to harden.
