Vegan Florentine Cookies

Crispy, chocolatey, and nutty: These vegan Florentine cookies give you everything you could need in a cookie. To make sure every single guest at your house can enjoy them, we’ve made sure they are vegan, low in sugar, and gluten-free.

200 gflaked almonds

25 gInstant Oats

75 gdark chocolate

2 tbspcoconut blossom sugar

2 tbspCoconut oil

1.5 tspFlavour Kick Vanilla

Preparation

Preheat the oven to 160°C.

Melt the Coconut Oil, cinnamon, Flavor Kick and coconut blossom sugar in a small saucepan, then add the soy cream.

Add the flaked almonds and Instant Oats and combine everything.

Spread the florentine mixture on a baking tray lined with baking paper and bake at 160°C for 10 min. If you want, you can drizzle the maple syrup over the tops of the cookies to help them bake up darker and crispier.

Remove the baking tray from the oven and allow to cool briefly.

Cut the dough into small squares while it is still warm.

Melt the dark chocolate over a water bath and dip each of the florentine cookies halfway into the chocolate.
