The most delicious tomato galette
Ingredients
For the crust:

150 mlwarm water
For the filling:

400 gfresh tomatoes (heirloom, coeur de boeuf, etc)

1 clovegarlic

100 gvegan cream cheese

1 tbspagave syrup or maple syrup

4 sprigsfresh thyme

4 sprigsfresh basil
Preparation

Mix the Protein Pizza mix and water in a bowl. Knead until they form a dough. Set aside.

Slice the tomatoes thinly. Chop the garlic.

Dust your working surface with flour. Roll the dough out into a thin circle. Use a rolling pin or press and shape with your hands.

Preheat the oven to 180° C.

Spread the cream cheese on the pizza crust. Leave about 2cm of free space around the edge of the crust.

With your hands, strip half of the herbs from their stems. Tear into smaller pieces, if desired. Spread the garlic and the herbs evenly over the cream cheese. Season with salt and pepper.

Now place the tomato slices evenly over the crust, overlapping each one slightly over the one before it. Drizzle the agave syrup over the tomatoes.

Gently fold the edge of the crust towards the inside of the tomato galette. Bake your tomato galette for 40-45 minutes, until crispy. To check for doneness, use a knife to gently lift one edge and see if the bottom looks done. If it’s not, leave in the oven for a few more minutes.

Sprinkle the rest of the fresh herbs on the top of the tomato galette. Slice and serve.
