High-Protein Smoked Salmon Pasta

An easy cream cheese & lemon sauce feature in this healthy smoked salmon pasta recipe. I like to use high protein lentil spaghetti here but if you have our protein pasta, feel free to use that instead. To bring some freshness, I’ve sprinkled in some chopped parsley but other green herbs like basil or dill will work amazingly well, too.

Ingredients

2 Persons

  • 150 g
    red lentil spaghetti (or similar high protein pasta)
  • 160 g
    frozen peas or petits pois
  • 100 g
    light cream cheese
  • 100 g
    smoked salmon, torn into small pieces
  • 0.5
    lemon, zest finely grated, juiced
  • 1 tbsp
    extra virgin olive oil
  • 1 handful
    fresh parsley, roughly chopped
  • pinch
    Black pepper
  • pinch
    Salt

Preparation

    Boil the red lentil spaghetti in a large pot of salted, boiling water according to the directions on the packet. In the last minute of cooking, stir in the frozen peas then drain the peas and pasta and return them to the pot.

    Stir in the cream cheese, smoked salmon, lemon zest & juice, olive oil and parsley. Season with black pepper and salt, to taste.

    Divide between two bowls and top with more parsley then serve.
