100 gsmoked salmon

120 glow-fat fromage frais (quark) or Greek yogurt
salt, pepper

optional toppings:dill, caviar, lemon juice
Preparation

Put the Protein Pancake mix, water, and a pinch of salt and pepper into a bowl. Whisk until a smooth batter is formed.

Heat half of the coconut oil in a pan over medium heat.

Use a teaspoon of batter for each blini. Cook until golden-brown on the bottom, flip, and repeat.

After you’ve used up half of the batter, add the second half of the coconut oil to the pan. Continue cooking until you have 12 finished blinis.

Plate the blinis on a serving plate and add a teaspoon of low-fat fromage frais to each. Top with smoked salmon.

If you want, garnish the smoked salmon blinis with caviar, dill, and a spritz of lemon juice.
