Moist Vegan Banana Bread

Fluffy, moist and just the right amount of sweetness: that’s how we like our vegan banana bread. Animal products can easily be replaced with plant-based alternatives. The chia seeds stand in for the egg. Applesauce takes the place of butter, making sure it’s not too dry. And our Vegan Protein saves you using a handful of sugar, as well as flour. Now that’s a-peel-ing!

280 gsoy milk

120 gunsweetened applesauce

100 gcoconut blossom sugar

220 gwhole-grain spelt flour

60 gVegan Protein Banana

2 tspbaking powder

Preheat the oven to 180°C.

Use a fork to mash the bananas in a bowl. Add the chia seeds, soy milk, applesauce, and coconut sugar. Mix well.

Add the flour, Vegan Protein and baking powder and mix into a batter.

Grease a loaf pan, or line it with parchment paper. Fill with the batter. If desired, slice a banana in half and press it into the top as decoration.

Bake the banana bread for 60 minutes. For the best results, cover with aluminum foil or parchment paper so the top doesn’t darken too much. Test for doneness by sticking a toothpick into the thickest part of the bread. If it comes out moist but clean, the banana bread is done.

Let the vegan banana bread cool down a bit before cutting into slices.
