You up for some pie first thing in the morning? Who are we kidding, who isn’t? This vegan recipe for high-protein pumpkin spice overnight oats makes it possible. You’ll have the ultimate pumpkin pie experience, without the baking. Topped with baked apples and fresh garnishes, these oats are the perfect way to get you going for your day.

For the overnight oats:

100 goats

2 tbspWhite Chia Seeds

160 mloat milk

200 mlwater

2 tbsplemon juice

1 tbsp

2 tspcinnamon

0.25 tspnutmeg

0.25 tspginger, ground

0.25 tspcardamom

1 pinchsalt
For the apple topping:

0.5 tspCoconut oil

1 tspFlavour Kick Vanilla

0.5 tspcinnamon

optional toppingscoconut yogurt, hazelnut or other nut butter, pomegranate seeds, granola
Preparation

Put all the ingredients for the overnight oats into a bowl and mix well. Cover the bowl and set aside overnight in the fridge.

Peel and core the apple. Dice into small cubes.

Heat the coconut oil in a pan on medium-high. Add the apple cubes, cinnamon, and Flavor Kick. Saute for 5-10 minutes.

Divide the pumpkin pie overnight oats mixture into two bowls or Mason jars. Top with the apple-cinnamon compote.

Serve with coconut yogurt, nut butter, granola, and pomegranate seeds as desired.
