No matter how you slice it, potatoes rank among the best of the vegetables. Not only because they’re so versatile, but also because of their many health benefits. Potatoes are rich in nutrients and filling, too, while being lower in calories per 100g than many other side dishes. If you like potatoes as much as we do, these potato pancakes are just the right thing for you! They taste heavenly topped with a dollop of applesauce.

Peel the potatoes and grate them into a bowl. Peel the onion and grate it into the same bowl.

Pick up the grated potato mix in your hands. Squeeze as much liquid out as you can.

Add the Protein Pancake mix, salt, pepper, and nutmeg to the bowl. Mix well.

Preheat the oil in a pan over medium-high heat. Using a serving spoon, place 4 spoonfuls of the batter into the hot oil.

Cook the potato pancakes for 4-5 minutes on each side until crispy and golden brown.

Drain the potato pancakes on a paper towel before serving. Serve with a dollop of applesauce and/or sour cream or herbed fromage frais.
