Pecan Pie Baked Oats

Have we mentioned this one before? Waking up first thing in the morning to a fresh-baked pie…. it sure sounds amazing. We make it possible with this recipe for homemade baked oats. The roasted pecans give this pie spinoff its nuttiness: a perfect match for your fall brunch plans.

Ingredients

8 Persons

For the baked oats:

  • 100 g
    rolled oats
  • 80 g
    Instant Oats
  • 1 tsp
    baking powder
  • 2 tbsp
    Vegan Protein Vanilla
  • 1 tsp
    cinnamon
  • 0.25 tsp
    nutmeg, ground
  • 50 g
    pecan nuts
  • 480 ml
    oat milk
  • 1 tbsp
    White Chia Seeds
  • 3 tbsp
    water
  • 125 g
    unsweetened applesauce
  • 2 tbsp
    Coconut oil
  • 1 tsp
    Flavour Kick Vanilla
  • 1 pinch
    salt

For the topping:

  • 50 g
    pecan nuts
  • 1.5 tbsp
    maple syrup
  • 0.5 tsp
    cinnamon

Preparation

    Preheat the oven to 175° C.

    Mix the White Chia Seeds and water in a small bowl, making sure to get all the chia seeds wet. Set aside for 3-5 minutes to let them absorb the water.

    In a bowl, mix together all the dry ingredients for the baked oats.

    Mix all the wet ingredients, including the chia seeds, into the dry ingredients until well blended. Set aside.

    Now make the topping: warm the maple syrup in a pan on medium heat for about 2 minutes. Remove from the heat and add the other topping ingredients to the warm maple syrup in the pan. Stir well.

    Line a loaf pan or other baking pan with parchment paper. Put the baked oats mixture into the parchment paper-lined pan. Smooth the top with a spatula, then spread the topping over it.

    Bake the pecan pie baked oats for 35-45 minutes at 175° C, until they are golden-brown.
