Chocolate Peanut Butter Dates (+ Protein)

An easy snack for when you want something sweet and salty, these chocolate-coated peanut butter dates are a great recipe to try. The dates are split and stuffed with peanut butter (or tahini) then coated in our DIY protein chocolate coating. They’re chewy, chocolatey and creamy – so good for on-the-go snacking.

Ingredients

  • 60 g
    no added sugar dark chocolate
  • 10 g
    coconut oil
  • 15 g
    foodspring chocolate whey protein
  • 14
    dates
  • 50 g
    peanut butter

Preparation

    Melt the chocolate and coconut oil in a heatproof bowl set over a pan of simmering water. Once fully melted remove the bowl from the pan and stir in the whey protein.

    Cut a slit down the length of each date and remove the stone. In the hole where the stone was, fill this with peanut butter (or tahini) and press the date back together to seal the slit.

    Dip the filled date in the chocolate, turning to coat, and use a fork to remove to a baking tray lined with baking paper. Sprinkle with salt and any other toppings you want for decoration.

    Place into the fridge to set. Once set, transfer to a sealed container – these are best stored in the fridge to prevent the chocolate coating getting too soft.
