This crispy snack is inspired by the viral TikTok peanut butter cup rice cake! Using high-protein puffed lentil cakes instead of rice cakes boosts the protein content, as does mixing in our chocolate whey protein into the chocolate topping. The result is a creamy, crunchy & peanut-butter-y snack you’ll love.

3high-protein puffed lentil cakes

1 pinchflaky salt, optional
Preparation

Melt together the dark chocolate and coconut oil in a heatproof bowl set over a pan of simmering water (or microwave in a microwave-safe bowl in short bursts until melted).

Allow to cool until warm to the touch then stir in the whey protein until fully combined.

Spread the peanut butter onto the rice cakes and then spread the chocolate mixture on top. Chill until the chocolate has set then sprinkle with flaky salt, if using, and enjoy your peanut butter cup rice cake!
