Light Tiramisu in a Glass

This easy tiramisu recipe will do your body good. Not a trace of sugar, mascarpone, or biscuit – and yet, every layer is a fresh delight. Surprise everyone – even yourself – with this light and airy dessert that tastes too good to be true, and doesn’t weigh you down an ounce.

Ingredients

2 Persons

For the biscuit dough:

    eggs
  • 20 g
    Whey Protein Coffee
  • 1 tsp
    unsweetened cocoa powder
  • 60 g
    low-fat fromage frais

For the cream:

  • 250 g
    low-fat fromage frais
  • 20 g
    plain yogurt (1.5% fat)
  • 1.5 tsp
    Flavour Kick Vanilla

For the topping:

  • 2 tsp
    unsweetened cocoa powder

Preparation

    Preheat the oven to 180° C.

    Separate the eggs. Beat the egg whites until they form stiff peaks.

    Mix the egg yolks with the Whey Protein, cocoa powder, and fromage frais in another bowl. Fold in the egg whites.

    Place a sheet of parchment paper on a baking sheet. Spread the mixture into a 1-cm-high, rectangular shape and make sure the top is flat. Bake for 10 minutes and set aside to cool.

    Meanwhile, prepare the cream: Mix the fromage frais, yogurt, and Flavor Kick until well combined. If you want your cream sweeter, add another half teaspoon of Flavor Kick.

    As soon as the biscuit base has cooled a bit, find the glass you’ll be serving the tiramisu in, turn upside down, and use the rim to cut 6 circles out of the dough.

    Lay one disk of biscuit at the bottom of the glass. Spread 2 tablespoons of cream on top. Repeat the process twice. When you’ve finished with the last layer of cream, sift a layer of cocoa powder on the top.

    The recipe makes two glasses of tiramisu.
