Hot Cross Buns Recipe

Today we’re going to bake some spiced Easter buns, which are traditionally served on Good Friday. So many people are big fans of these symbolic, sweet and spicy delicacies. The subtler sweetness in our hot cross buns comes from our Whey Protein instead of heaps of refined sugar. So enjoy!

Ingredients

For the buns:

  • 300 ml
    buttermilk
  • 1 cube
    fresh yeast
  • 1 tsp
    sugar
  • 1
    orange (juice and zest)
  • 30 g
    Coconut oil
  • 400 g
    spelt flour
  • 80 g
    Whey Protein Vanilla
  • 1 tsp
    cinnamon
  • 80 g
    raisins

For the topping:

  • 60 g
    spelt flour
  • 50 g
    water
  • optional
    2 tbsp maple syrup

Preparation

    Heat the buttermilk quickly, just until warm without simmering. Put into a bowl with the yeast and the sugar and allow to dissolve and activate for 10 minutes.

    Afterwards, add the orange juice and zest, coconut oil, spelt flour, Whey Protein, and cinnamon. Mix to form a smooth dough.

    Fold in the raisins. Cover the bowl and let the dough rise for an hour.

    Dust your working surface with a bit of flour. Divide the dough into 8 equally sized balls.

    Put the dough balls onto a piece of parchment paper on top of a baking tray. Preheat the oven to 180°C.

    Mix the flour and water to form a paste. Fill the paste into a piping bag. Use the piping bag to draw a cross on the top of each bun.

    Bake the hot cross buns for 20-25 minutes, until golden-brown. Then brush with maple syrup if you want.
