Healthy Strawberry Blondies
Dotted with white chocolate chips and enriched with smooth peanut butter, these healthy strawberry blondies are so delicious. Topping the blondies with the halved strawberries helps expose them to the heat of the oven, reducing down their juices to a jammy glaze. This recipe makes a small batch of 8 blondies so it’s baked in a standard loaf pan! If you’d prefer to make a standard-sized batch, simply double the recipe and increase the baking time by around 5 minutes.

120 gstrawberries, halved

10 gwhite chocolate chips
Preparation

Preheat the oven to 180C and line a standard loaf tin with a sling of baking paper.

Combine the oats and bicarbonate of soda in a small bowl. Add the maple syrup, peanut butter and egg then stir to get a thick dough. Press into the lined loaf tin in an even layer. Top with the halved strawberries and bake for 15-20 minutes, until the strawberries are juicy and the blondies are baked through but still slightly gooey.

Remove from the oven and, whilst hot, sprinkle with the white chocolate chips and leave to cool. Once cool, slice into 8 squares and serve. Store leftovers in the fridge for up to 3 days.
