Raspberry Gin and Tonic Cake

Sitting in the sunshine, sipping a gin and tonic – it’s one of the things that makes summer, summer. But what happens when you’re starting to get hungry for a refreshing snack right at gin o’clock? It’s exactly the right time for a gin and tonic cake! Fresh raspberries collide with Lyre’s Dry London Spirit. And the whole thing gets a bubbly flavor from our refreshing Wild Berry Energy Aminos. It’s a high-protein, refreshing cake with little sugar. We can promise you that this cake will catapult straight to the highlight of your next picnic in the park! We’ve made what’s called a poke cake. After it’s baked, you poke holes in the cake and drizzle more flavorful liquid over it. The holes ensure that the gin will make its way all the way through the cake, keep it moist, and cause an absolute flavor explosion!

Ingredients

For the gin and tonic cake:

  • 125 g
    spelt flour
  • 120 g
    stevia
  • 50 g
  • 2 tsp
    baking powder
  • 135 ml
  • 210 ml
    oat milk
  • 2 tbsp
    lemon juice
  • 1 pinch
    salt
  • 100 g
    raspberries, fresh
  • 60 ml
    Zitronensaft
  • 1
    Lyre´s Dry London Spirit

Lyre’s Dry London Spirit

  • 3 g
    For the frosting:
  • 100 g
    vegan cream cheese
  • 1
    Zitrone, Saft & Abrieb

Preparation

    Preheat the oven to 180° C.

    Grease a springform pan and set it aside.

  • 3

    Put all the dry ingredients into a bowl and stir well.

  • 4

    Add the wet ingredients to the dry ones. Use a mixer to beat together the ingredients until they form a smooth batter.

    Put the batter into the greased springform pan.

  • 6

    Bake the gin and tonic cake at 180° for about 35 minutes.

    Set the cake aside for 10 minutes to cool. Then remove carefully from the form.

    Meanwhile, make the liquid. Put all the ingredients for the drizzle into a small bowl and mix well.

    Poke lots of holes into the cake with a wooden skewer or the end of a wooden spoon. Drizzle the liquid over the top.

    Now spread the frosting evenly over the top of the cake.
