Healthy Chocolate Window Cookies

The gates have opened for winter baking. Start your ovens for a batch of irresistible window cookies! And these homemade jammy dodgers are filled with a secret surprise: our creamy Protein Cream! What won’t you find in these sandwich cookies? Added sugar. In case that wasn’t enough to convince you… by the way, they’re gluten-free.

Ingredients

1 Person

  • 50 ml
    cold water
  • 30 g
    Coconut oil
  • 30 g
    stevia
  • 50 g
    corn starch
  • 50 g
    ground almonds
  • 50 g
    chestnut flour or buckwheat flour
  • 30 g
    rice flour
  • 1 TL
    baking powder
  • 0.5 TL
    vanilla extract

for the filling:

  • 60 g
    Protein Cream Gingerbread

Preparation

    Add all ingredients to a bowl. Mix until they form a smooth dough. If the dough is too sticky, add more flour of your choice a bit at a time.

    Roll the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.

    reheat the oven to 175°C.

    Dust your working surface with flour. Roll out the dough to a 2-3-mm thickness.

    Using a round cookie cutter, cut circles in the dough (it should make enough for about 24). Use a smaller cookie cutter to cut smaller windows in half of the circles.

    Cover a baking sheet with parchment paper. Place the cookies on the parchment paper and bake for 13-15 minutes.

    Set the jammy dodgers aside to cool. Once cool, spread a half teaspoon of Protein Cream on top of each cookie without a hole. Cover with the cookies that have holes.

    Dust the window cookies with powdered sugar if you wish.
