Healthy Chocolate Window Cookies
Ingredients

50 mlcold water

30 gCoconut oil

30 gstevia

50 gcorn starch

50 gground almonds
-
50 gchestnut flour or buckwheat flour

30 grice flour

1 TLbaking powder

0.5 TLvanilla extract
for the filling:

Add all ingredients to a bowl. Mix until they form a smooth dough. If the dough is too sticky, add more flour of your choice a bit at a time.

Roll the dough into a ball, wrap in cling film, and chill in the fridge for 30 minutes.

reheat the oven to 175°C.

Dust your working surface with flour. Roll out the dough to a 2-3-mm thickness.

Using a round cookie cutter, cut circles in the dough (it should make enough for about 24). Use a smaller cookie cutter to cut smaller windows in half of the circles.

Cover a baking sheet with parchment paper. Place the cookies on the parchment paper and bake for 13-15 minutes.

Set the jammy dodgers aside to cool. Once cool, spread a half teaspoon of Protein Cream on top of each cookie without a hole. Cover with the cookies that have holes.

Dust the window cookies with powdered sugar if you wish.
