Protein Chocolate Caramel Rice Cake
This crispy chocolate caramel rice cake is inspired by the viral TikTok peanut butter cup rice cake recipe. We’ve used our salted caramel protein cream instead of peanut butter to make this dreamy chocolate-caramel snack. Using high-protein puffed lentil cakes instead of rice cakes boosts the protein content, as does mixing in our chocolate whey protein into the chocolate topping.
Ingredients

30 gno added sugar dark chocolate

5 gCoconut oil

2 tbspWhey Protein Chocolate

3high-protein puffed lentil cakes

2 tbspSalted Caramel Protein Cream

1 pinchflaky salt, optional
Preparation

Melt together the dark chocolate and coconut oil in a heatproof bowl set over a pan of simmering water (or microwave in a microwave-safe bowl in short bursts until melted).

Allow to cool until warm to the touch then stir in the whey protein until fully combined.

Spread the protein cream onto the rice cakes and then spread the chocolate mixture on top. Chill until the chocolate has set then sprinkle with flaky salt, if using, and enjoy your chocolate caramel rice cake!
