This carbonara recipe is real comfort food, done healthy. A classic spaghetti carbonara is usually packed with fat and calories. We’ve switched those out for plant-based alternatives and come out with a creamy, smoky, and light pasta dish. Buon appetito!

100 gProtein Pasta

1 tspolive oil

50 gsmoked tofu

100 mlplant-based cream (e.g. soy cream, oat cream)

1 tbspnutritional yeast flakes
salt, pepper, parsley to taste

optionalvegan parmesan topping (cashews, nutritional yeast flakes, and salt, blended to a dry crumble)
Preparation

Cook the pasta according to package directions. Set aside some of the cooking water from the pasta.

Meanwhile, cut the smoked tofu into cubes.

Heat the olive oil in a pan over medium heat. Cook the tofu cubes until crispy.

Add the plant-based cream and bring to a simmer. Stir in the nutritional yeast flakes. Season with salt and pepper.

Add the pasta to the pan and mix well. Finish with a splash of the pasta cooking water to thin the sauce, and heat again.

Serve the vegan carbonara. Garnish with parsley if desired.

Our Tip:If you want, you can blend a handful of cashews with a pinch of nutritional yeast flakes and salt to make a vegan parmesan topping. The perfect finish to your carbonara!
