Mediterranean Quinoa Salad
with cucumber, tomato and parsley

A perfect quinoa salad to make-ahead for picnics and summer lunches. Nutty quinoa is paired with chopped crunchy vegetables – tomato, cucumber and radishes, lots of fresh parsley and a high-protein salad dressing made using our neutral whey protein.

85 gdry quinoa, rinsed

250 mlwater

0.5vegetable or chicken stock cube

200 gcherry tomatoes, quartered

200 gcucumber, diced
-
60 grocket or baby spinach
-
50 gradishes, thinly sliced or quartered

30 gparsley, finely chopped

0.5red onion, thinly sliced
MISO DRESSING:

2 tbspmiso paste
-
60 gfreshly squeezed orange juice

25 gWhey Protein Neutral

1 tbspapple cider vinegar
Preparation

Quinoa and water and stock into a pot. Bring to the boil then turn head down to low, simmer for 15 minutes until water is almost fully absorbed. Remove from the heat, cover with a lid, let stand for 5 minutes to absorb the remaining liquid. Uncover and spread out on a plate then let cool for at least 5 minutes.

Add the tomatoes, cucumber, rocket, radishes, parsley and onion to the plate of quinoa and toss together.

For the dressing, whisk the orange juice into the miso paste in a medium bowl until smooth. Add the whey protein and apple cider vinegar and whisk again until smooth and creamy.

Pour the dressing over the salad and toss to combine then serve immediately.
