This minestrone is more than a boring vegetable soup. Our minestrone has a special surprise: our very own Protein Pasta. Boasting 4x as much protein as conventional pasta, it’ll turn your bowl into a real soup for fitness.

200 gtomatoes

50 gpeas (frozen or canned)

1 sprigrosemary

600 mlvegetable broth

100 gwhite beans

100 gProtein Pasta
Preparation

Dice the onions, carrots, celery, and potatoes into cubes. Quarter the tomatoes.

Heat the olive oil in a pot on medium heat. Add the onions, carrots, and celery to the pot and cook until their colors change.

Add the potatoes, tomatoes, peas, and rosemary to the pot. Saute for 3 minutes on medium heat.

Deglaze the pot with the vegetable broth and simmer for 10 minutes.

Finally, add in the beans and simmer for another 10 minutes.

Pour in the Protein Pasta. Cook for another 7-8 minutes until the noodles are just al dente.

Serve the minestrone into bowls. Season with salt, pepper, and parsley.
