60 gmixed mushrooms

Preparation

1Making the sauce: Melt the butter, then on low heat add grated parmesan, foodspring Whey Protein and water, stirring. Remove from heat, allow to cool. Blend and put aside for later.

2Warm the beans on medium low heat with a bit of olive oil and a pinch of salt. Set aside.

3Cook the mushrooms. On high heat, add pre-cut mushrooms. Allow the mushrooms to lightly brown, and then cook the mushrooms with a bit of neutral oil and salt on low heat. To finish them off, add the miso and a dash of high quality balsamic.

4Lightly rewarm your sauce and pour it in the base of the bowl. Add warmed beans and arrange mushrooms on top. Grate additional parmesan over the mushrooms, and garnish with pea shoots and dashes of green oil.
