Jackfruit Tacos Recipe

If you’re tired of the tofu and tempeh, give jackfruit tacos a try as your next meat substitute. The right combination of spices gives this jackfruit the flavor of juicy pulled chicken – the perfect filling for a delicious taco or two. Surprise your friends and guests with this unconventional street food recipe. Bonus? It’s vegan.

Ingredients

2 Persons

  • 400 g
    canned jackfruit
  • 1 tbsp
    Coconut oil
  • 1 tsp
    paprika
  • 2 tsp
    ground cumin
  • 1 tbsp
    tomato paste
  • 1 tbsp
    soy sauce

maple syrup

  • 2 tbsp
    Peanut Butter
  • 2 tbsp
    hot sauce of your choice (e.g. Sriracha or Tapatio)
  • tbsp
    soy sauce

lime (juiced)

  • 6
    small corn tortillas
  • handful
    red cabbage, shredded

Preparation

    Drain the can of jackfruit and pull into small pieces with your hands. Discard the hard part at the end.

    Warm the coconut oil in a pan on medium-high heat. Cook the jackfruit until it turns golden-brown.

    Season the jackfruit with cumin and paprika. Add the tomato paste, soy sauce and maple syrup and cook for another few minutes.

    For the dressing: Mix all ingredients in a bowl.

    Quickly warm the tortillas in a warm oven or pan.

  • 6

    Fill the tortillas with jackfruit, red cabbage and coriander. Top with the peanut sauce, some soy yogurt and lime juice.
