Chocolate Peanut Butter Sandwich Cookies Recipe
Ingredients
For the sandwich cookies:

100 gInstant Oats

80 gspelt flour

20 gcocoa powder

70 gground almonds

90 gstevia

70 gCoconut oil

60 gPeanut Butter

1 tbspWhite Chia Seeds

3 tbspwater

1 tspFlavour Kick Chocolate

1 tspbaking powder

1 pinchsalt
For the filling:

100 gPeanut Butter
-
optional toppingpowdered sugar
Preparation

Mix the Chia Seeds with the water in a small bowl. Set aside for about 10 minutes to let them expand.

Heat the Coconut Oil in a pot or microwave. Mix with the stevia, Peanut Butter, chia seed mix, and the Flavor Kick. Stir well.

Add the Instant Oats, ground almonds, spelt flour, cocoa powder, baking powder, and the salt. Knead everything into a smooth dough. If it’s too dry, add a tablespoon of cold water and mix again.

Roll the dough up into a ball. Wrap it in plastic wrap and chill in the fridge for about an hour.

Meanwhile, preheat the oven to 180° C.

Dust your working surface with flour. Roll the dough out. Cut out circles with a round cookie cutter. Set aside half of the circles; in the other half, use a smaller cookie cutter to cut circles, hearts, or other shapes out of the middle of each.

Place the cookies onto a sheet of parchment paper on top of a cookie sheet. Bake for 8-12 minutes at 180° C.

Take the cookies off of the sheets to cool. When they have cooled, spread a teaspoon of Peanut Butter on each of the bottoms without a hole. Place the cookies with window holes on top of the peanut butter and press each one down lightly.

Dust the window cookies with powdered sugar, if you want.
