Thai Style Chicken Lettuce Wraps
with high-protein sweet chilli sauce

For an easy, light dinner, try these Thai-style chicken lettuce wraps, flavoured with green Thai curry paste and served in a crunchy lettuce cup with cucumber, mint and coriander. 2 tbspgreen Thai curry paste

500 gchicken mince

2 headssweet gem lettuce, leaves separated and washed

1cucumber, thinly sliced

2 handfulfresh mint

tbsplime, cut into wedges
Preparation

Heat the coconut oil in a large, non-stick frying pan over a medium heat. Add the curry paste and stir into the oil, cooking for 1 minute until fragrant. Add the chicken mince and cook, breaking the mince up as you stir, until cooked through then remove from the heat. Taste and season with salt, if needed.

Fill the lettuce leaves with the chicken mince and top with the cucumber, coriander and mint. Serve the chicken lettuce wraps with the lime wedges for squeezing and our sweet chilli sauce (see intro for recipe link) for drizzling.
