Vegan Banana Protein Pancakes

A fluffy, easy vegan pancake recipe is a must for weekend breakfasts! These vegan banana protein pancakes use our vegan vanilla protein and instant oats for the base. The mashed bananas keep them moist and soft. Served with soy yogurt and maple syrup for dipping or drizzling.

Ingredients

2 Persons

  • 120 g
    Instant Oats
  • 30 g
    Vegan Protein Vanilla
  • 2.75 tsp
    baking powder
  • 0.5 tsp
    ground cinnamon
  • 2
    ripe bananas, mashed
  • 250 ml
    unsweetened soy milk
  • a few sprays
    spray oil, for the pan

To serve:

  • 50 g
    Greek-style unsweetened soy yogurt
  • 4 tbsp
    maple syrup

Preparation

    Combine the instant oats, protein powder, baking powder and cinnamon in a medium bowl. Add the mashed banana and soy milk and stir to get a smooth batter.

    Spray the inside of a large non-stick frying pan with spray oil and place over a medium heat on the stove. Pour in heaped tablespoons of batter to form circles. Let cook over a medium-low heat until golden underneath then flip and let cook on the other side until golden (1-2 minutes per side).

    Remove to a tray and keep the pancakes warm in a 100C oven as you cook the rest.

    Serve the banana protein pancakes warm with the yogurt and maple syrup. You can top with fresh fruit if you like, too.
