Acai Bowl with Raspberry-Coconut Granola
Stop us if you’ve heard this one before. You can’t get enough of the acai bowls from the cafe around the corner, but every time you think about going and getting yourself one, the line snaking out the door stops you – from getting your bowl, and even more so, from starting your day! We feel you. Making a great breakfast can take up tons of time and energy. But we’ve had enough – and are making our own bowl, which is ready in moments. Top it with a crispy homemade coconut-raspberry granola, and presto! Your very own acai bowl will be the highlight of your morning and fill you up with power for your whole day.
Ingredients
For the Breakfast Bowl:

400 mlwater
For the granola:

10 gCoconut Chips

40 goatmeal

20 gcashews
-
0.5 tspFlavour Kick Vanilla

0.5 tbsplemon zest

45 gmaple syrup

0.5 tbspCoconut oil

0.5 tbsplemon juice

30 gdried raspberries
-
1 pinchsalt
-
optional toppingsfresh strawberries, fresh raspberries
Preparation

Preheat the oven to 160° C.

Line a cookie sheet with parchment paper.

Put the coconut chips, cashews, Flavor Kick, lemon zest, and salt into a bowl. Stir together.

Put the maple syrup and coconut oil into a small bowl. Heat up briefly, then add to the other ingredients and mix well.

Add the lemon juice and stir again.

Spread the granola evenly over the baking sheet. Bake for 20 minutes at 160° C.

Let the granola cool, then mix in the dried raspberries. The granola will keep for at least 2 weeks.

Now add the Breakfast Bowl mix and the water to a bowl. Stir until creamy.

Serve the acai bowl topped with the homemade granola and fresh berries.
